- 1 tbsp. sugar
- 3 tbsp. extra virgin olive oil
- Medium mixing bowl
- Meat thermometer
- Aluminum foil

Preheat your pan for 3 to 5 minutes at very high heat. You really need the pan smoking hot before you start cooking.
